Ingredients
For the marinade:
1C.Coca-Cola
¼C.Soy sauce
3Tbsp.Oil
2Tbsp.Dijon mustard
⅓C.Ketchup
2Tbsp.Worcestershire
1Tbsp.Dry mustard
2tsp.Minced garlic
1tsp.Ginger
2Tbsp.Balsamic vinegar
1tsp.Thyme
5lb.Pork loin roast
For the sauce:
1Tbsp.Cornstarch
1C.Brown sugar
2Tbsp.Butter
½tspDry mustard
⅔C.Coca-Cola
⅓C.Balsamic vinegar
Salt and pepper to taste
Instructions
Preheat the oven to 325 degrees.
Add the ingredients for the marinade into a casserole dish, and stir to combine well.
Place the pork loin into the marinade, and refrigerate it overnight, turning it several times so that each side gets evenly coated.
Remove the pork loin from the marinade, place on a baking rack or roasting pan, and bake for 30-40 minutes per pound until the internal temperature is at least 175 degrees.
Add the ingredients for the sauce to a saucepan over medium heat, bring to a boil, and then reduce to a simmer until the sauce has thickened.
Pour the sauce over the pork loin during the last half an hour of cooking time.
