Old South Coco-Cola Pork Loin

Old South Coco-Cola Pork Loin

Ingredients for Old South Coco-Cola Pork Loin:

For the marinade:

  • 1 C. Coca-Cola
  • ¼ C. Soy sauce
  • 3 Tbsp. Oil
  • 2 Tbsp. Dijon mustard
  • ⅓ C. Ketchup
  • 2 Tbsp. Worcestershire
  • 1 Tbsp. Dry mustard
  • 2 tsp. Minced garlic
  • 1 tsp. Ginger
  • 2 Tbsp. Balsamic vinegar
  • 1 tsp. Thyme
  • 5 lb. Pork loin roast

For the sauce:

  • 1 Tbsp. Cornstarch
  • 1 C. Brown sugar
  • 2 Tbsp. Butter
  • ½ tsp Dry mustard
  • ⅔ C. Coca-Cola
  • ⅓ C. Balsamic vinegar
  • Salt and pepper to taste

How to make Old South Coco-Cola Pork Loin:

Step1: Preheat the oven to 325 degrees.

Step2: Add the ingredients for the marinade into a casserole dish, and stir to combine well.

Step3: Place the pork loin into the marinade, and refrigerate it overnight, turning it several times so that each side gets evenly coated.

Step4: Remove the pork loin from the marinade, place on a baking rack or roasting pan, and bake for 30-40 minutes per pound until the internal temperature is at least 175 degrees.

Step5: Add the ingredients for the sauce to a saucepan over medium heat, bring to a boil, and then reduce to a simmer until the sauce has thickened.

Step6: Pour the sauce over the pork loin during the last half an hour of cooking time.
