It used to be hard to imagine marinating meat of any type in a marinade that had Coca cola in it. However, once you try this method, you can never go back to the plain and ordinary method again.

The Pork Loin comes out moist, and tender with just a hint of the Coca Cola flavor. The sauce that the Pork Loin slowly cooks in also contains soda.

Together, between the marinade and the cooking, your end result is a tasty, moist, and flavorful Pork Loin!

I would be hard-pressed to find even one person that does not like the flavor of this Pork Loin.

Does Coca-Cola actually flavor the meat?

Yes, there will be a slight flavor of the Cola that gets into the meat as it marinates and as it cooks. This creates a delicious, caramelized layer on the top of the Pork Loin.

Are there any variations that I could use?

You could use a sugar-free Coca-Cola, or if you are game, try one of the flavored Coca-Cola. You could also use a Pork Roast instead of a Pork Loin.

Ingredients:

For the marinade:

  • Coca-Cola
  • Soy sauce
  • Oil
  • Dijon mustard
  • Ketchup
  • Worcestershire
  • Dry mustard
  • Minced garlic
  • Ginger
  • Balsamic vinegar
  • Thyme
  • Pork loin roast

For the sauce:

  • Cornstarch
  • Brown sugar
  • Butter
  • Dry mustard
  • Coca-Cola
  • Balsamic vinegar
  • Salt and pepper to taste

How to make Old South Coco-Cola Pork Loin:

Step 1: Preheat the oven to 325 degrees.

Step 2: Add the ingredients for the marinade into a casserole dish, and stir to combine well.

Adding the coca-cola.

Adding the soy sauce.

Adding the ketchup.

Adding the oil.

Adding the minced garlic.

Adding the balsamic vinegar.

Adding the dry mustard.

Adding the ginger.

Step 3: Place the pork loin into the marinade, and refrigerate it overnight, turning it several times so that each side gets evenly coated.

Step 4: Remove the pork loin from the marinade, place on a baking rack or roasting pan, and bake for 30-40 minutes per pound until the internal temperature is at least 175 degrees.

Step 5: Add the ingredients for the sauce to a saucepan over medium heat, bring to a boil, and then reduce to a simmer until the sauce has thickened.

Adding the balsamic vinegar.

Adding the cornstarch.

Adding the brown sugar.

Adding the dry mustard.

Adding the coca-Cola.

Step 6: Pour the sauce over the pork loin during the last half an hour of cooking time.

If you are lucky enough to have leftovers, cool them completely and place them into an airtight container. Place the container in the refrigerator for up to 4 days.

Yes, the Pork Loin can be frozen. Be sure it is cooled to room temperature before placing it into a freezer-safe, airtight container. Store it in the freezer for up to 3 months.

How should I reheat the Pork Loin?

Wrap the Pork loin in foil and place on a baking tray. Place the tray into a preheated 350* oven for 10 to 15 minutes. You could also microwave the Pork Loin. Place a serving on a plate and cover with a paper towel. Microwave for 1 to 2 minutes or until the desired temperature is reached.
