Fried potatoes and onion are a regular side dish in my family, the crispy golden skin and the melt-in-the-mouth center of potato chunks make us want to savor every bite. And together with equally crisp onions, there's a harmony of flavors in every forkful.
Ingredients
1lb.Gold potatoes sliced into bite sized pieces
½Onion chopped into large pieces
Peanut oil
2Tbsp.Butter
Salt and pepper to taste
Paprika and basil for garnish
Instructions
Heat a layer of peanut oil and the butter in a skillet over medium high heat.
Add the chopped potatoes and onion to the heated skillet, and saute until the potatoes and onions are browned and crispy. Stir often to avoid burning parts of them.
Add salt and pepper to taste, drain and excess oil and garnish with paprika and basil prior to serving.
