Ingredients
½C.Melted butter unsalted
2Large eggs
¼C.Powdered sugar substitute
1C.Buttermilk
½tsp.Baking soda
1C.Yellow cornmeal
1C.All purpose flour
½tsp.Salt
6-8Hot dogs sliced into 1 inch pieces
Instructions
Preheat the oven to 350 degrees.
In a mixing bowl, combine the melted butter, eggs, sugar substitute, buttermilk, baking soda, cornmeal, flour and salt until a smooth batter has formed.
Spoon the batter into the sections of well greased mini muffin tins, filling them about ¾ of the way full.
Place a piece of hot dog into the center of each filled section of the mini muffin tin.
Bake for 10-12 minutes until lightly browned and cooked through.
