This recipe for Cheesy Broccoli Stuffed Chicken Breasts is the perfect way to get your daily dose of calcium and protein in one delicious meal. The chicken breasts are stuffed with a cheesy broccoli filling, then breaded and baked to golden perfection.
Ingredients
4Boneless skinless chicken breasts
1tsp.Paprika
1tsp.Italian seasoning
1tsp.Salt
½tsp.Pepper
1Tbsp.Olive oil
2C.Broccoli florets steamed and chopped
¼C.Minced bell pepper
½C.Cheddar cheese shredded
4oz.Cream cheese softened
¼C.Parmesan cheese grated
2tsp.Minced garlic
Salt and pepper to taste
Instructions
Preheat the oven to 400 degrees.
Slice a pocket into the middle of the chicken breasts lengthwise. Be sure not to cut the chicken breasts completely through.
Season both sides of the chicken breasts with the paprika, Italian seasoning, salt and pepper.
In a bowl, combine the broccoli, bell pepper, cheddar cheese, cream cheese, parmesan cheese, minced garlic and salt and pepper to taste.
Stuff the chicken with the broccoli mixture.
Heat the olive oil in a large skillet over medium high heat on the stove.
Sear both sides of the chicken breasts and place them onto a baking sheet.
Cover the baking sheet with aluminum foil and bake for 20 minutes, or until the chicken is cooked through.
