When picnic season comes around, Potato Salad is one of the most loved dishes there are. So many variations for Potato Salad are available, it seems every family has their own variation. This one is one that I absolutely love. With a few basic ingredients, you too can make this wonderful dish.
Ingredients
5poundsIdaho potatoes, peeled and cubed
½of a medium onion, chopped finely
5hard-boiled eggs, chopped
¼cupsweet pickle cubes or relish
½cupdill pickle cubes or relish
1celery stalk, diced - Optional
Salt and pepper to taste
1 ½-2cupsHellman’s Mayonnaise
1 ½-2tablespoonsmustard
Paprika for garnish - Optional
1hard-boiled egg, sliced for garnish - Optional
Instructions
Slice your peeled potatoes into thin cuts
In a 5-quart pot, add potatoes and water
Make sure potatoes are submerged completely
Place pot on the stove and turn heat to medium
Cook the potatoes for 8 minutes
Drain your potatoes and allow them to cool
In a medium mixing bowl, add in your eggs and onion
Stir to combine
Grab another mixing bowl and add in celery, pickles, mustard, mayonnaise, salt, and pepper
Mix all ingredients
Now, mix the potatoes with the eggs and onion
Toss everything together
Add in the mayonnaise and stir until blended
Add in your sliced hard-boiled eggs on top and sprinkle paprika
