Ingredients
1 ¼C.Graham crackers crumbs
1C.All purpose flour
1 ½tsp.Baking powder
1Stick butter softened
½C.Brown sugar
1Large egg divided
3oz.Cream cheese softened
¼C.Granulated sugar
2tsp.Lemon zest
½tsp.Vanilla extract
Instructions
Preheat the oven to 350 degrees.
Add the graham crackers, flour, baking powder, butter, brown sugar and egg white to a mixing bowl, and beat on high until a dough has formed.
Form the dough into even sized balls and flatten slightly with the palm of your hand. Use your thumb to make an indentation in the center of each cookie.
In a mixing bowl, beat together the cream cheese, granulated sugar, lemon zest, vanilla extract and egg yolk until smooth and creamy.
Place a bit of the cream cheese mixture in the center of each cookie and bake for 10-12 minutes.
