Ingredients
1 2/3CFlour
2Eggs
2/3CSugar
½CButter
2tspBaking Powder
1CApple Cider
1tspCinnamon
½tspSalt
1tspVanilla
For the icing:
3CConfectioners’ Sugar
1CButter
½CBrown Sugar
2tbspMilk
1tspVanilla
1tspCinnamon
Instructions
In a bowl whisk together all the dry ingredients. (flour, baking powder, cinnamon, salt.
In another bowl beat the sugar and butter together until creamy.
Add in the eggs and vanilla and mix again.
Mix the dry ingredients into the wet mixture.
Mix in the apple cider.
Preheat the oven to 350 degrees F.
Line muffin tin with cupcake linings.
Fill each ¾ full of batter and place in preheated oven for 19 minutes or until toothpick comes out clean.
Remove and let cool.
How to Prepare the Icing:
Combine brown sugar, cinnamon, vanilla, and butter and mix.
Slowly add confectioners’ sugar and mix then pour milk in.
