Ingredients for Apple Cider Cupcakes:

1 2/3 C. Flour

2 Eggs

2/3 C. Sugar

½ C. Butter

2 tsp Baking Powder

1 C. Apple Cider

1 tsp Cinnamon

½ tsp Salt

1 tsp Vanilla

  • For the icing:

3 C. Confectioners’ Sugar

1 C. Butter

½ C. Brown Sugar

2 tbsp Milk

1 tsp Vanilla

1 tsp Cinnamon

How To Make Apple Cider Cupcakes:

Step 1. In a bowl whisk together all the dry ingredients. (flour, baking powder, cinnamon, salt)

 

Step 2. In another bowl beat the sugar and butter together until creamy.

And

Step 3. Add in the eggs and vanilla and mix again.

Step 4. Mix the dry ingredients into the wet mixture.

Step 5. Mix in the apple cider.

Step 6. Preheat the oven to 350 degrees F.

Step 7. Line muffin tin with cupcake linings.

Step 8. Fill each ¾ full of batter and place in preheated oven for 19 minutes or until toothpick comes out clean.

Step 9. Remove and let cool.

  • How To Prepare The Icing:

Step 1. Combine brown sugar, cinnamon, vanilla, and butter and mix.

 

Step 2. Slowly add confectioners’ sugar and mix then pour milk in.

Step 3. Put the icing in the in a piping bag and ice the cooled cupcakes.

Step 4. Serve and enjoy!

Optional: Top up each cupcake with an apple slice before serving!
