Ingredients
Shrimp:
1lb.medium shrimp, deveined and shelled
4Tbspjerk seasoning
½Cjerk marinade
Salt to taste
3Tbspavocado oil
1Cdiced pineapple, sauteed
Grits:
1Cgrits
2Cwater
3Cwhole milk
½CSmoked Gouda
½CParmesan
Instructions
Shrimp:
In a medium bowl add the jerk seasonings, marinade, and salt. Stir to blend. Set aside.
Prep a large skillet heating it on the stove until it is hot.
Add in the oil.
Toss in the shrimp. Brown each side of the shrimp for 1 ½ minutes.
Transfer to a bowl.
Reheat if necessary.
Grits:
Pour in the water, milk, and salt in a medium pot.
Bring to a boil.
Whisk the contents in the pot while adding in the grits.
Reduce the heat, continuing to whisk allowing the grits to cook for 15 minutes.
The grits will thicken.
Add the Gouda and Parmesan cheeses.
Lower the heat to a simmer. Cover the pot. Stirring often.
