If you're looking for a delicious and hearty casserole that's sure to please, look no further than this Mexican Tater Tot Casserole! Packed with ground beef, black beans, corn, and of course, tater tots, this casserole is guaranteed to be a hit with the whole family.
Ingredients
1lb.ground beef
1onion, diced
1packet taco seasoning mix
1green chilli, sliced
1can black beans, rinsed and drained
3cupfrozen corn
1can red enchilada sauce
3cupsshredded cheddar cheese, divided
4cupstater tots, frozen
Cilantro, to garnish
Sour cream, to garnish
Instructions
Preheat oven to 375˚F. Grease a 9 x 13 inch baking dish.
In a large skillet over medium heat, add the ground beef and diced onion. Brown meat until thoroughly cooked. Drain off excess fat and return to skillet.
Add the taco seasoning, green chilli, black beans, frozen corn and enchilada sauce to the skillet with the meat. Cook for another 8- 10 minutes over medium heat. Add 2 cups of shredded cheese to the meat mixture and gently mix.
Pour everything from the skillet into the greased baking dish and spread evenly. Place the tater tots evenly over top and bake for 35 to 40 minutes.
Remove from oven, add the remaining cup of cheese over the top. Bake another 5 minutes until cheese is melted and slightly browning.
Garnish with cilantro and top with sour cream and serve hot.
