Ingredients:
- Ground beef
- Onion
- Taco seasoning mix
- Green chili
- Black beans
- Frozen corn
- Red enchilada sauce
- Shredded cheddar cheese
- Tater tots
- Cilantro
- Sour cream

How To Make Mexican Tater Tot Casserole:
Step 1. Preheat the oven to 375˚F. Grease a 9 x 13-inch baking dish.
Step 2. Add the ground beef and diced onion in a large skillet over medium heat. Brown meat until thoroughly cooked. Drain off excess fat and return to skillet.

Step 3. Add the taco seasoning, green chilli, black beans, frozen corn and enchilada sauce to the skillet with the meat.

Step 4. Cook for another 8- 10 minutes over medium heat.

Step 5. Add 2 cups of shredded cheese to the meat mixture and gently mix.

Step 6. Pour everything from the skillet into the greased baking dish and spread evenly.

Step 7. Place the tater tots evenly over top and bake for 35 to 40 minutes.

Step 8. Remove from oven, and add the remaining cup of cheese over the top. Bake another 5 minutes until the cheese is melted and slightly browning.
Step 9. Garnish with cilantro and top with sour cream and serve hot.

- 1 packet taco seasoning mix
- 1 green chilli, sliced
- 1 can black beans, rinsed and drained
- 3 cup frozen corn
- 1 can red enchilada sauce
- 3 cups shredded cheddar cheese, divided
- 4 cups tater tots, frozen
- Cilantro, to garnish
- Sour cream, to garnish

Instructions

How should I store and reheat the leftovers?
Be sure that the food has cooled to room temperature. Place the leftovers into an airtight container or wrap them tightly with plastic. The dish can be stored in the refrigerator for up to 3 days. To reheat the dish, simply place the oven-safe dish on a baking tray and heat in the oven for 20 minutes at 350*.
