  • 1 can black beans, rinsed and drained
  • 3 cup frozen corn
  • 1 can red enchilada sauce
  • 3 cups shredded cheddar cheese, divided
  • 4 cups tater tots, frozen
  • Cilantro, to garnish
  • Sour cream, to garnish
