Easy to make Mexican Tater Tot Casserole with gound beef and cheese. Grandkids loved it!

Ingredients Needed To Make Mexican Tater Tot Casserole:
1 lb. ground beef
1 onion, diced
1 packet taco seasoning mix
1 green chilli, sliced
1 can black beans, rinsed and drained
3 cup frozen corn
1 can red enchilada sauce
3 cups shredded cheddar cheese, divided
4 cups tater tots, frozen
Cilantro, to garnish
Sour cream, to garnish
How To Make Mexican Tater Tot Casserole:
Step 1. Preheat oven to 375˚F. Grease a 9 x 13 inch baking dish.
Step 2. In a large skillet over medium heat, add the ground beef and diced onion. Brown meat until thoroughly cooked. Drain off excess fat and return to skillet.
Step 3. Add the taco seasoning, green chilli, black beans, frozen corn and enchilada sauce to the skillet with the meat. Cook for another 8- 10 minutes over medium heat. Add 2 cups of shredded cheese to the meat mixture and gently mix.

Step 4. Pour everything from the skillet into the greased baking dish and spread evenly. Place the tater tots evenly over top and bake for 35 to 40 minutes.

Step 5. Remove from oven, add the remaining cup of cheese over the top. Bake another 5 minutes until cheese is melted and slightly browning.
Step 6. Garnish with cilantro and top with sour cream and serve hot.
