In a medium bowl, combine 1/3 cup cream of chicken soup, chopped chicken, ½ cup bread crumbs, celery, onion and ¼ tsp poultry seasoning. Mix well.
Shape mixture into patties or croquettes. Chill in fridge for an hour.
Pour remaining bread crumbs into a bowl. Remove patties/ croquettes from the fridge, and roll in bread crumbs.
In a large skillet over medium heat, melt butter. Add the patties/croquettes, and cook on each side until brown.
In a small saucepan over low heat, add remaining soup, milk and 1/4 teaspoon poultry seasoning. Heat for a few minutes, stirring occasionally, until hot.
Serve patties/ croquettes with sauce over the top.
