Roasted green beans and potatoes have been a dish for centuries. People in the South would add some ham or ham hock to their green beans and potato roaster to make a whole meal. This is a great dish to make that is quick and easy and will do well for any occasion, including simply dinner.
Ingredients
4Potatoes peeled and cut into bite sized pieces
1lb.Fresh green beans trimmed
3Tbsp.Olive oil divided
2tsp.Garlic powder divided
2tsp.Paprika
2tsp.Italian seasoning
Salt and pepper to taste
Instructions
Preheat the oven to 400 degrees.
Add the potatoes to a large mixing bowl and drizzle with 2 Tbsp of the olive oil.
Sprinkle the potatoes with the paprika, Italian seasoning, 1 tsp of the garlic powder and salt and pepper to taste.
Toss to combine.
Place the potatoes on a parchment lined baking sheet and bake for 15 minutes.
In a mixing bowl, toss the trimmed green beans in the remaining olive oil, garlic powder and salt and pepper to taste.
After 15 minutes, remove the potatoes from the oven and add the green beans to the tray. Bake for an additional 25 minutes.
