Ingredients
5Strips Of Fried Bacon, Plus More For Garnish
Set Aside One Tablespoon Of Bacon Grease
1Small Yellow Onion, Chopped
½cupGreen Pepper, Diced
Salt/ Pepper, To Taste
9Large Eggs
¼cupRegular Sour Cream, Room Temp
½cupWhole Milk
½tspCayenne Pepper
1cupSharp Cheddar Cheese, Shredded
3cupTater Tots, Frozen
Garnish:
Fresh Parsley, Chopped
Instructions
Preheat oven to 375 degrees.
Spray the 9 x 13 inch baking dish with nonstick baking spray.
Chop the bacon. Set aside.
Add the tablespoon of bacon grease into a skillet.
Add the chopped onion and diced green pepper, cooking on medium heat for 3 minutes.
Set the cooked onion and green pepper to the side.
Add the cracked eggs into a large bowl. Whisk until the beaten eggs form a foamy consistency.
Add in the sour cream and milk beating with an electric mixer.
Season with salt and pepper, adding in the cayenne pepper.
Pour the egg mixture into the prepared baking dish.
Top with the chopped bacon, fried onion, and fried green pepper.
Cover the casserole with sharp cheddar cheese.
Top with the tater tots.
Bake at 375 degrees for 40 minutes.
Check to make sure that the tater tots are crisp. If not, return to the oven until it becomes crisp.
Take out of the oven , set aside for 5 minutes.
Garnish with chopped bacon and chopped fresh parsley.
