This Bacon Cheeseburger Casserole is the perfect weeknight meal – it’s easy to put together and everyone will love it. Plus, there’s bacon involved, so you can’t go wrong.
Ingredients
2 Tbsp. ketchup, Sugar free
1 Tbsp. Olive oil
3Oz.Cream cheese softened
1 ½lbs. Ground beef
2 Eggs, Large
½ C. Onion, chopped
⅓ C. Heavy whipping cream
1 tsp. Oregano
2 C. Shredded cheddar cheese
2C. Shredded cheddar cheese
2 tsp. Minced garlic
½ C. Dill pickle slices
2 tsp. Worcestershire sauce
½ C. Bacon pieces
Salt and pepper to taste
Instructions
Heat the oven to 400 degrees, and spray a 9x13 baking dish with cooking spray.
Add the olive oil, ground beef and onions to a skillet over medium high heat.
Saute the mixture until the meat is completely cooked through. Drain the excess fat.
Mix in the Worcestershire sauce, minced garlic, cream cheese, oregano, sugar-free ketchup, and salt and pepper to taste. Saute until the cheese has melted and the mixture is well combined.
Spread the meat mixture into the casserole dish.
Whisk together the eggs, 1 cup of the cheese and the heavy whipping cream.
Layer the mixture over the meat in the casserole dish.
Spread a layer of dill pickle slices on top, and then sprinkle the remaining cheese and bacon.
Bake the casserole for 20-25 minutes.
Garnish with freshly chopped parsley before serving.
