This Stuffed Pepper Skillet takes all of your favorites and combines it into one easy to make dish. Making the stuffed peppers this way seems to make it all the more comforting.
Ingredients
2Tbsp.Tomato paste
½Onion, chopped
1 ½C.Monterey jack cheese , shredded
2Green bell peppers , chopped
1lb.Ground beef
2tsp.Minced garlic
¾C.Uncooked long grain white rice
2C.Beef broth
14oz.Diced tomatoes undrained, I used 14oz can
Salt and pepper to taste
Instructions
Place the ground beef, onions and peppers in a large high sided skillet over medium high heat.
Saute until the meat is browned and the vegetables have softened. Drain any excess grease.
Add in the garlic, and saute another minute.
Mix in the rice, broth, tomatoes and salt and pepper to taste.
Allow the mixture to come to a boil, reduce the heat to medium low, cover and simmer for 20 minutes or until the rice is cooked through.
Top with the cheese, cover and allow the cheese to melt before serving.
