This Ham and Potato Corn Chowder is a hearty and comforting meal that is sure to please everyone in the family. Ingredients
2StalksCelery, chopped
2C.Cooked ham , diced
3C.Milk
6SlicesBacon , cooked and crumbled
Salt and pepper to taste
1Onion , chopped
5 ½Tbsp.Butter , divided
⅓C.All purpose flour
1Bay leaf
¾tsp.Oregano
5Red onions, Medium, cubed
2CansChicken broth , 14.5 oz. each
Green onions , chopped for garnish
2Carrots , peeled and diced
½tsp.Dried thyme
½C.Sour cream , or heavy whipping cream
2C.Corn , fresh or frozen
Instructions
Add 1 Tbsp butter, carrot, celery and onion to a pot over medium heat, and saute until softened.
Mix in the chicken broth, potatoes, thyme, bay leaf and oregano.
Season with salt and pepper to taste.
Bring to a boil, and then reduce the heat to medium low.
Cover, and simmer for 15 minutes, or until the potatoes have become tender.
Mix in the corn and ham, and simmer for another 5 minutes.
In a separate pot, heat the remaining 4 Tbsp of butter over medium heat.
Stir in the flour until well combined.
Whisk the milk into the flour mixture, and simmer until thickened.
Remove the mixture from the heat, and stir in the sour cream or heavy whipping cream.
Blend the milk mixture into the soup, and serve garnished with bacon and green onions.
