Ingredients
4medium russet potatoes evenly sized
4tablespoonsolive or avocado oil
Coarse sea salt enough to coat potatoes
Instructions
Preheat grill to 350°F.
Prepare the potatoes by washing well to dislodge any dirt on the skin. Use a fork to prick the skin of each potato several times. Place the potatoes in a large bowl and drizzle with oil.
Add salt to cover the bottom of a small bowl. Place the oiled potatoes in the small bowl one at a time and rotate until the outside of the potato is fully covered in a thin layer of salt.
Place the oiled and salted potatoes on a microwave safe dish and cook in the microwave on high for 4-6 minutes.
Wrap each potato tightly with aluminum foil and place on the hot grill. Close the lid and cook for 30-40 minutes. Keep the lid closed as much as possible during cooking.
After 30 minutes check to see if the potatoes are done by carefully unwrapping one of the potatoes and piercing the skin with a fork. If the fork inserts easily the potatoes are done.
Remove the potatoes from the grill, and unwrap the foil. Slice each potato open lengthwise like a book. Fluff the insides of the potato with a fork and dress with your favorite baked potato topping before serving
