Just like the Mexican Pizza from Taco Bell but homemade. This Mexican pizza is super easy to make and cooks in just 15 minutes. No more fast food, this copycat Mexican pizza is made at home and better than the original.
Ingredients
2tablespoonsvegetable oil
88-inch flour tortillas
1cuprefried beans, warmed
1cupcooked, Mexican-seasoned ground beef
1/2cuptaco sauce
1/4cupred enchilada sauce
1cupshredded mozzarella cheese
1cupshredded Mexican cheese blend
1/2cupdiced tomatoes
3tablespoonsblack olives
3tablespoonschopped green onions
Instructions
Preheat the oven to 400°F.
Heat vegetable oil in a non-stick skillet over medium heat, and once hot fry the tortillas one at a time until golden brown on both sides. About 2-3 minutes per side. Remove the fried tortilla and drain on a paper towel lined plate.
Layout 4 fried tortillas on a baking sheet.
Spread with an even layer of refried beans. Add a layer of cooked ground beef, and half of the mozzarella cheese.
Place the remaining fried tortilla on top of each one.
Combine the taco sauce and enchilada sauce in a small bowl and mix well. Spread 2 tablespoons of the sauce over each of the tortillas.
Sprinkle with the remaining mozzarella cheese and the Mexican cheese blend.
Bake at 400°F for 3-4 minutes until the cheese has melted.
Top the Mexican pizzas with your choice of diced tomatoes, black olives, and sliced green onions. Slice into quarters and serve hot.
