What is a Mexican Pizza?

A Mexican pizza is a popular menu item from the fast food restaurant taco bell that is a combination of a pizza, quesadilla, and an enchilada. Instead of pizza crust, a Mexican pizza uses two fried flour tortillas filled with beans, meat and cheese, similar to a quesadilla. This layered quesadilla is then topped with a mixture of taco sauce and enchilada sauces, cheese, and toppings, before being baked to crispy melted cheese perfection.

Although this easy version uses seasoned ground beef, there are many simple variations to this recipe that will fit your tastes.

Ingredients needed:

  • Vegetable oil
  • Flour tortillas
  • Refried beans, warmed
  • Cooked, Mexican-seasoned ground beef
  • Taco sauce
  • Red enchilada sauce
  • Shredded mozzarella cheese
  • Shredded Mexican cheese blend
  • Diced tomatoes
  • Black olives
  • Chopped green onions

Mexican Pizza Variations and Substitutions:

This quick recipe is incredibly versatile and can be made exactly how you like, there are even simple substitutions that can make this low-carb, gluten-free, and vegetarian-friendly.

Try adding a variety of different fillings to your Mexican pizza to make it your own such as:

  • Cooked chicken
  • Carnitas
  • Barbacoa

Tips for Success:

Here are some quick tips to make the perfect Mexican Pizza every time!

  • Drain the fat from the ground beef after cooking to avoid a soggy Mexican pizza.
  • Watch the tortillas carefully and flip them multiple times to brown them evenly and avoid overcooking.
  • For a crispier Mexican pizza, increase the baking time in order to brown the cheese and crisp up the tortilla.
  • To prevent the top tortilla from sliding off, add an additional layer of cheese over top of the ground beef to stick everything together.
  • Let the pizza cool for around 5 minutes before slicing. This allows them to firm up which will prevent the toppings and cheese from sliding off while slicing.

The best way to store cooked Mexican pizzas is in a sealed container in the fridge. If you need to stack them, put a layer of parchment paper in between each pizza to prevent the toppings from sticking.

If you want to make these Mexican pizzas ahead of time or meal prep, they can last in the fridge for 2-3 days, or frozen in the freezer for up to 2 months.

To reheat, warm the Mexican pizzas in the microwave, oven, or air fryer until warmed through.

Ingredients 

  • 2 tablespoons vegetable oil
  • 8 8-inch flour tortillas
  • 1 cup refried beans, warmed
  • 1 cup cooked, Mexican-seasoned ground beef
  • 1/2 cup taco sauce
  • 1/4 cup red enchilada sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup diced tomatoes
  • 3 tablespoons black olives
  • 3 tablespoons chopped green onions

Instructions

  • Preheat the oven to 400°F.
  • Heat vegetable oil in a non-stick skillet over medium heat, and once hot fry the tortillas one at a time until golden brown on both sides. About 2-3 minutes per side. Remove the fried tortilla and drain on a paper towel lined plate.
  • Layout 4 fried tortillas on a baking sheet.
  • Spread with an even layer of refried beans. Add a layer of cooked ground beef, and half of the mozzarella cheese.
  • Place the remaining fried tortilla on top of each one.
  • Combine the taco sauce and enchilada sauce in a small bowl and mix well. Spread 2 tablespoons of the sauce over each of the tortillas.
  • Sprinkle with the remaining mozzarella cheese and the Mexican cheese blend.
  • Bake at 400°F for 3-4 minutes until the cheese has melted.
  • Top the Mexican pizzas with your choice of diced tomatoes, black olives, and sliced green onions. Slice into quarters and serve hot.
