Fresh cherry tomatoes roasted in garlic and savory herbs make a great side dish, topping for dips and spreads, or an addition to your favorite pasta.

Instructions
Preheat the oven to 400°F. Lightly grease a baking sheet with cooking spray or oil.
Slice cherry tomatoes in half and layout on the baking sheet in a single layer.
Combine the olive oil, garlic, Italian seasoning, salt, and pepper in a small bowl and mix well.
Drizzle the oil and herb mixture over the tomatoes on the baking pan and toss to coat.
Bake at 400°F for 25 minutes until the tomatoes have softened and started to caramelize.
