Leftovers, Storage, and Freezing Instructions

Once roasted these tomatoes should be stored in an airtight container in the fridge for up to 4 days.

For longer term storage, lay the roasted tomatoes out on a baking sheet in a single layer and place in the freezer for 2-3 hours until frozen solid. Transfer the frozen tomatoes to a resealable freezer bag and freeze for up to 3 months. Thaw in the fridge for several hours before use.

Ingredients 

  • 16 ounces cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon Italian seasoning
  • salt and pepper to taste
  • 2 tablespoons fresh minced herbs such as parsley, basil or chives
  • cooking spray

Instructions

  • Preheat the oven to 400°F. Lightly grease a baking sheet with cooking spray or oil.
  • Slice cherry tomatoes in half and layout on the baking sheet in a single layer.
