For the Rice:

long-grain brown rice

water

room temp

salt

olive oil

chopped white onions

diced orange bell pepper

ginger paste

minced garlic

boneless

skinless chicken breasts, cut into small chunks

eggs

beaten

tbsp.
lite soy sauce

tsp
sesame oil
green onions

diced
Instructions
!Rice:
In a large pot, add rice, salt, and water.
Stir to combine, and the water to a boil.
Reduce heat to low and cover.
Cook for 40 minutes or until tender and liquid is absorbed.
Remove from heat and set to the side.
!To Fry the Rice:
In a small saute pan add the eggs and cook to a scramble.
Remove from the pan and set to the side.
Add olive oil to a large nonstick skillet or wok.
Turn the heat to medium, add chicken, onions, pepper, garlic and ginger.
Stir to combine.
Cook for about 4 to 5 minutes, until onions are translucent and chicken is cooked through.
Add the rice and water.
Stir to combine.
Stir in the soy sauce and sesame oil.
Stir to combine.
Add the cooked eggs and toss.
Remove from the heat.
Garnish with green onions.
