Materials
1-2poundsboiling potatoeswaxy or all-purpose potatoes*
2tspsalt
1tbspbuttersalted
fresh parsleychopped
Instructions
Stovetop Method:
Carefully wash the potatoes under running water to dislodge any debris or dirt on the skin.
Place the potatoes in a large saucepan with salt, and fill with enough water to cover the potatoes. The water should be about 1 inch above the top of the potatoes.
Place over high heat until boiling then lower the heat to medium. Boil uncovered until the potatoes are fork tender. This can take from 12-30 minutes depending how large the potatoes are.
Drain the potatoes over the sink using a colander, and add butter and chopped parsley, or use as directed in recipe.
Microwave method:
Place the potatoes in a large microwave safe dish with a lid, season with salt and add 2-3 tablespoons of water.
Cover and microwave on high for 6-8 minutes until fork tender. Careful they are hot!
Allow the potatoes to rest for 2 minutes before serving.
