This Panera Broccoli Cheddar Soup recipe is the perfect way to enjoy a classic soup without having to go to a restaurant. It is packed with flavor and has a creamy texture that will make you feel like you are eating the real thing.
Ingredients
¼C+ 1 Tbsp. Butter unsalted
1C.Onion diced
⅓C.Celery chopped
¼C.All purpose flour
2C.Milk
2C.Chicken broth
2C.Cooked and chopped broccoli florets
1C.Matchstick carrots
2C.Shredded sharp cheddar cheese
Salt and pepper to taste
Instructions
Melt 1 tbsp butter in a saucepan over medium heat on the stove. Add the onions and celery and saute until beginning to soften. Remove and set aside.
Add the ¼ cup of butter and ¼ cup of flour to the saucepan and stir to combine. Continue stirring and cook for 3 minutes.
Whisk in the milk, chicken broth and salt and pepper to taste. Simmer covered for 15 minutes
Add the carrots, broccoli and onions and celery back to the saucepan and simmer covered another 15 minutes.
Stir in the cheddar cheese until it is completely melted and serve.
