Panera Broccoli Cheddar Soup

Prep Time: 20 minutes | Cook Time: 30-40 minutes | Servings: 6

Ingredients:

¼ C + 1 Tbsp. Butter unsalted

1 C. Onion diced

⅓ C. Celery chopped

¼ C. All-purpose flour

2 C. Milk

2 C. Chicken broth

2 C. Cooked and chopped broccoli florets

1 C. Matchstick carrots

2 C. Shredded sharp cheddar cheese

Salt and pepper to taste

How to make Panera Broccoli Cheddar Soup:

Step 1. Melt 1 tbsp butter in a saucepan over medium heat on the stove. Add the onions and celery and saute until beginning to soften. Remove and set aside.

Step 2. Add the ¼ cup of butter and ¼ cup of flour to the saucepan and stir to combine. Continue stirring and cook for 3 minutes.

Step 3. Whisk in the milk, chicken broth, and salt and pepper to taste. Simmer covered for 15 minutes

Step 4. Add the carrots, broccoli and onions, and celery back to the saucepan and simmer covered another 15 minutes.

Step 5. Stir in the cheddar cheese until it is completely melted and serve.
