Peach Pie Cupcakes bring you a moist yellow cupcake that is topped with a vanilla frosting and peach pie filling. These peach cupcakes are great for a weeknight dessert, birthday celebration and more.
Ingredients
1box of Butter Yellow Cake mix
1Cwater
1/3Cunsalted butter, softened
3large eggs
1Cupcake pan
Cupcake liners
Vanilla Frosting
2Cunsalted butter, softened
4 ½Cpowdered sugar
2tsppure vanilla extract
3 - 6Heavy whipping cream
1large piping bag with star tip
1 - 21ozpeach pie mix
Crumble Topping
½Clight brown sugar
¼Csugar
1tspground cinnamon
¼tspkosher salt
½Cunsalted butter, melted
1 ¼Cflour
Instructions
Preheat the oven to 350 degrees and line cupcake pan with the liners, set them aside.
Grab your stand mixer or hand mixer and blend together cake mix, water, butter, and eggs. Scoop ¾ batter into the liners
Bake in the oven for 19 minutes or until a light golden brown, remove and place on the cooling rack.
Vanilla Frosting Directions:
Using a standing mixer, beat together the butter, powdered sugar, heavy whipping cream, and vanilla until smooth and stiff with peaks. This will be your vanilla frosting to pipe on top of the cupcakes.
Crumble Topping Directions:
Combine all ingredients into a medium bowl for the peach pie crumble.
Using your fingers, mix ingredients together until combined and crumble like
Building the cupcake directions:
Pipe a ring of frosting onto the top of the cupcake
Repeat step again to have a “wall” of frosting
Remove some peaches from the can and cut into smaller bites
Scoop some of the peaches into the center of the frosting
Sprinkle some crumble on top of the peach pie cupcake.
