Ingredients
1lb.Boneless skinless chicken thighs cut into bite sized pieces
2tsp.Olive oil
1Red bell pepper cut into cubes
1c.Fresh pineapple cut into cubes
1tspminced ginger
2tsp.Minced garlic
¾c.Pineapple juice
⅓c.Soy sauce
⅓c.Hoisin sauce
⅓c.Chicken broth
¼c.Brown sugar
2tsp.Cornstarch
Sesame seeds for garnish
Green onions for garnish
Salt and pepper to taste
Instructions
Heat the oil up in a large skillet over medium-high heat. Add the chicken to the skillet, with salt and pepper to taste.
Cook the chicken stirring often, until it is cooked through and no longer pink in the middle.
Add in the red pepper and pineapple cubes. Cook for an additional 3-4 minutes until the pepper begins to soften.
In a separate bowl, mix together the chicken broth, hoisin sauce, soy sauce, pineapple juice and brown sugar.
Pour the sauce mixture into the chicken mixture in the skillet, and simmer for several minutes.
Mix the cornstarch with a tablespoon of water until smooth, and add it to the skillet. Stir to combine.
Cook down the sauce until it has thickened.
Top the pineapple chicken with chopped green onions and sesame seeds or garnish, and serve over rice.
You can hollow out half of a pineapple and fill it with rice and the chicken mixture for serving as well.
