This oven roasted melting potatoes recipe is an absolute favorite in my house. It will be yours as well. You can't beat the potato for a crispy full of flavored goodness that people can't get enough of. Crispy with a crunch that gives way to melted soft deliciousness, I love serving this dish again and again.
Ingredients
6Russet potatoes
2sprigs fresh rosemary
1tbspminced garlic
2bay leaves
1tspsea salt
2tbspolive oil
2tbsp.Cajun spice
2tbsp.Salted butter
Instructions
In a large stock pot add your potatoes, and enough water to submerge the potatoes.
Add to the potatoes the garlic, bay leaves, rosemary, and salt.
Stir until well combined.
Turn the heat to medium-high, bring to a boil for 5-8 minutes.
Remove the stock pot from the heat and drain the potatoes.
Remove the potatoes and place in a bowl to allow them to dry to room temperature for 1 hour.
Preheat the oven to 375 degrees F.
Line with aluminium foil on a baking sheet.9. Add olive oil to the potatoes and toss to coat.
Add the cajun spice to the potatoes and toss to coat.
Place the potatoes onto the foil lined baking sheet.
Place the potatoes flesh side down.
Sprinkle the potatoes with sea salt.
Bake for 35 to 40 minutes.
Remove the potatoes from the oven and coat with butter.
