Oven Roasted Melting Potatoes

Ingredients for Oven Roasted Melting Potatoes:
6 Russet potatoes
2 sprigs fresh rosemary
1 tbsp minced garlic
2 bay leaves
1 tsp sea salt
2 tbsp olive oil
2 tbsp. Cajun spice
2 tbsp. Salted butter
How to make Oven Roasted Melting Potatoes:
Step1: In a large stockpot add your potatoes, and enough water to submerge the potatoes.
Step2: Add to the potatoes the garlic, bay leaves, rosemary, and salt.
Step3: Stir until well combined.
Step4: Turn the heat to medium-high, bring to a boil for 5-8 minutes.
Step5: Remove the stockpot from the heat and drain the potatoes.
Step6: Remove the potatoes and place them in a bowl to allow them to dry to room temperature for 1 hour.
Step7: Preheat the oven to 375 degrees F.
Step8: Line with aluminum foil on a baking sheet.
Step9: Add olive oil to the potatoes and toss to coat.
Step10: Add the cajun spice to the potatoes and toss to coat.
Step11: Place the potatoes onto the foil-lined baking sheet.
Step12: Place the potatoes flesh side down.
Step13: Sprinkle the potatoes with sea salt.
Step14: Bake for 35 to 40 minutes.
Step15: Remove the potatoes from the oven and coat with butter.
Step16: Place back in the oven for 7 minutes.
Step17: Remove the potatoes from the oven and serve.
