Is it necessary to boil potatoes before roasting?

Yes, because boiling improves the roasting process. It creates lightly cracked skins that let in added flavoring, for example, butter.

Why don’t my roast potatoes go crispy?

If you put the potatoes in the oven raw, they are unable to form the “crisp”  you want because their skin does not break, so the heat can’t create crispy edges.

Does tin foil make potatoes crispy?

Not at all. Instead, the foil won’t allow the moisture out and you end up with soggy steamed potatoes. Tin foil does the exact opposite of what you want.

How to serve Oven Roasted Melting Potatoes?

Serve these melting potatoes right out of the oven hot. Pair with burgers or hot dogs. Place around a cooked roast or meatloaf. They go well with almost everything.

Cooking Tips:

Adjust the oven time according to the size and cut. When cooking, before roasting, don’t overcook until it is too mushy. They should be firm enough cooked to roast them  not mash them,

Experiment with different herbs and spices. Slice the potatoes into variations of shapes or add other toppings like mouthwatering melted cheese.

Ingredients:

  • Russet potatoes
  • Rosemary
  • Minced garlic
  • Bay leaves
  • Sea salt
  • Olive oil
  • Cajun spice
  • Salted butter

How to make Oven Roasted Melting Potatoes:

Step 1. In a large stockpot add your potatoes, and enough water to submerge the potatoes.

Step 2. Add to the potatoes the garlic, bay leaves, rosemary, and salt.

Step 3. Stir until well combined.

Step 4. Turn the heat to medium-high, and bring to a boil for 5-8 minutes.

Step 5. Remove the stockpot from the heat and drain the potatoes.

Step 6. Remove the potatoes and place them in a bowl to allow them to dry to room temperature for 1 hour.

Step 7. Preheat the oven to 375 degrees F.

Step 8. Line with aluminum foil on a baking sheet.

Step 9. Add olive oil to the potatoes and toss to coat.

Step 10. Add the cajun spice to the potatoes and toss to coat.

Step 11. Place the potatoes onto the foil-lined baking sheet.

Step 13. Sprinkle the potatoes with sea salt.

Step 14. Bake for 35 to 40 minutes.

Step 15. Remove the potatoes from the oven and coat them with butter.

Step 17. Remove the potatoes from the oven and serve.
