You know autumn has arrived when pumpkin-flavored everything starts popping up. Fortunately, you can have these Pumpkin Muffins with Steusel Topping at any time of the year! Pumpkin is known as a superfood, packed with beta-carotene and fiber.
Ingredients
For the muffins:
2 ½C.All purpose flour
½C.Oats
4tsp.Pumpkin pie spice
2tsp.Baking soda
1tsp.Baking powder
1tsp.Salt
1 ½C.Pumpkin puree
1C.Brown sugar
1C.Granulated sugar
⅔C.Vegetable oil
½C.Applesauce
3Large eggs
1tsp.Vanilla extract
For the topping:
¼C.Brown sugar
2Tbsp.Butter melted
2Tbsp.Oats
2Tbsp.Flour
Instructions
Preheat the oven to 350 degrees.
In a mixing bowl, stir together the flour, baking soda, baking powder, oats, pumpkin pie spice and salt until well combined.
Add the pumpkin puree, brown sugar, granulated sugar, vegetable oil, applesauce, eggs and vanilla extract to the mixing bowl with the dry ingredients, and beat until a smooth batter has formed.
Fill cupcake liners in a muffin tin ⅔ of the way full of the batter.
In a bowl, mix together the ingredients for the topping and sprinkle on top of each muffin.
