Ingredients for Pumpkin Muffins with Streusel Topping:
- For the muffins:
2 ½ C. All purpose flour
½ C. Oats
4 tsp. Pumpkin pie spice
2 tsp. Baking soda
1 tsp. Baking powder
1 tsp. Salt
1 ½ C. Pumpkin puree
1 C. Brown sugar
1 C. Granulated sugar
⅔ C. Vegetable oil
½ C. Applesauce
3 Large eggs
1 tsp. Vanilla extract
- For the topping:
¼ C. Brown sugar
2 Tbsp. Butter melted
2 Tbsp. Oats
2 Tbsp. Flour
How To Make Pumpkin Muffins with Streusel Topping: Easy steps.
Step 1. Preheat the oven to 350 degrees.
Step 2. In a mixing bowl, stir together the flour, baking soda, baking powder, oats, pumpkin pie spice and salt until well combined.

Step 3. Add the pumpkin puree, brown sugar, granulated sugar, vegetable oil, applesauce, eggs and vanilla extract to the mixing bowl with the dry ingredients, and beat until a smooth batter has formed.

Step 4. Fill cupcake liners in a muffin tin ⅔ of the way full of the batter.
Step 5. In a bowl, mix together the ingredients for the topping and sprinkle on top of each muffin.

Step 6. Bake for 35-40 minutes until cooked through.
