Why I love Pumpkin Muffins with Streusel Topping?

  • If autumn had a taste, these pumpkin muffins would capture it. These are not overly sweet, but still sweet enough — especially with the streusel sprinkled on top.
  • For a baked good, these muffins land on the healthier side of bread because they are made with real pumpkin.
  • These muffins are also yummy enough to make throughout the year. So, if you have any canned pumpkin sitting around, you can whip up a batch any time you want.

Why are my pumpkin muffins rubbery?

Muffins can become rubbery by overmixing the batter. You’ll want to mix the batter until it just comes together and avoid overdoing it. Rubbery muffins can also be the result when the batch is overbaked or the oven temperature is too high.

Is pumpkin puree the same as canned pumpkin?

Pumpkin puree and canned pumpkin are essentially the same. You can look for a label on the can that says 100 percent pumpkin. Be careful about buying pumpkin pie filling because it may not be pure pumpkin.

What should be avoided in making muffins?

You want to make sure that your muffin pans are either greased or you have muffin liners. Never put muffin batter into an unoiled pan. It will be a cakey mess that is hard to clean.

What is the secret to moist muffins?

One of the best tips for creating super moist muffins is to keep the wet and dry ingredients separate before the final mix. Combining dry and wet ingredients too early can prematurely dry the batter, resulting in drier muffins.

How to serve Pumpkin Muffins with Streusel Topping?

Pumpkin muffins with streusel topping go great with a cup of apple cider. You can also grab some hot cocoa, coffee, or milk to wash the muffins down.

Cooking Tips:

  • Make sure to add the streusel topping right before baking the muffins. Try to avoid the muffin pan edge because the sugar will burn on the pan.
  • If you are not sure that the muffins are fully cooked, stick a toothpick in the center. If it comes out clean, that muffin is done!
  • Let the muffins rest for a little bit on a wire rack to allow equitable cooling.
