It is simple to prepare and calls for some other seafood favorites such as crab meat and shrimp. The preparation is simple and cooks quickly right in your oven.
Ingredients
2 - 6ozsalmon fillets
1 - 6ozcan of crab meat, drained
1 - 8ozbag small cooked shrimp, peeled and deveined
¼CMayo
¼Cshredded parmesan cheese
2tbspfresh lemon juice
2tbspgreen onions, chopped
1/2CItalian bread crumbs
Cajun Seasoning to season the Salmon
Instructions
Preheat oven and spray a cookie sheet with pam cooking spray
Cut a slit through the middle of each salmon fillet and season the whole salmon with cajun seasoning
In a large bowl, mix the crab meat, shrimp, mayo, parmesan cheese, lemon juice, green onions and ¼ C bread crumbs until combined
Stuff the center of each salmon using the crab and shrimp mixture
Top with 3 tbsp of the bread crumbs
Bake in the oven for 30 minutes or until the salmon starts to flake with a fork
