This Stuffed Salmon recipe have become a regular menu item in our kitchen! SO GOOD!
Ingredients for Stuffed Salmon:
2 – 6 oz salmon fillets
1 – 6 oz can of crab meat, drained
1 – 8 oz bag small cooked shrimp, peeled and deveined
¼ C Mayo
¼ C shredded parmesan cheese
2 tbsp fresh lemon juice
2 tbsp green onions, chopped
1/2 C Italian bread crumbs
Cajun Seasoning to season the Salmon
Directions for Stuffed Salmon:
Step 1. Preheat oven and spray a cookie sheet with pam cooking spray
Step 2. Cut a slit through the middle of each salmon fillet and season the whole salmon with cajun seasoning
Step 3. In a large bowl, mix the crab meat, shrimp, mayo, parmesan cheese, lemon juice, green onions and ¼ C bread crumbs until combined
Step 4. Stuff the center of each salmon using the crab and shrimp mixture
Step 5. Top with 3 tbsp of the bread crumbs
Step 6. Bake in the oven for 30 minutes or until the salmon starts to flake with a fork
Step 7. Remove and sprinkle fresh parsley on top
