This recipe does not take shortcuts, but it is easy to make. The taste is absolutely fabulous. Your family is going to be begging for more. I suggest that this is made for tonight's menu! The mixture is the right blend of refried beans, Ground beef and green chilis, with seasoning and enchilada sauce. Oh so good!
Ingredients
1lb.Ground beef
½Onion chopped
1Packet taco seasoning
1Can Refried beans
1Can green chilis
½C.Beef broth
1Can Enchilada sauce
8-9Large flour tortillas
3C.Shredded cheese
Green onion for garnish
Instructions
Preheat the oven to 350 degrees.
In a skillet over medium high heat on the stove, saute the ground beef and onion until the onion is tender and the beef is cooked through. Drain any excess fat.
Stir in the taco seasoning until well combined.
Reduce the heat to medium low and mix in the refried beans, green chilis, beef broth and ½ cup of the enchilada sauce. Stir to combine and simmer until the mixture thickens.
Fill the tortillas with the beef and bean mixture, roll them closed, and place them in a single layer in a 9x13 baking dish, seam side down.
Cover the tortillas with the enchilada sauce and top with the cheese.
Bake for 20 minutes and then garnish with green onion before serving.
