Baked Beef and Bean Enchiladas are one of my husband’s favorite meals! THEY’RE JUST PERFECT.
Prep Time: 20 minutes – Cook Time: 25-30 minutes – Servings: 8
Ingredients for Baked Beef and Bean Enchiladas:
1 lb. Ground beef
½ Onion chopped
1 Packet taco seasoning
1 Can Refried beans
1 Can green chilis
½ C. Beef broth
1 Can Enchilada sauce
8-9 Large flour tortillas
3 C. Shredded cheese
Green onion for garnish
How To Make Baked Beef and Bean Enchiladas:
Step 1. Preheat the oven to 350 degrees.
Step 2. In a skillet over medium high heat on the stove, saute the ground beef and onion until the onion is tender and the beef is cooked through. Drain any excess fat.
Step 3. Stir in the taco seasoning until well combined.
Step 4. Reduce the heat to medium low and mix in the refried beans, green chilis, beef broth and ½ cup of the enchilada sauce. Stir to combine and simmer until the mixture thickens.

Step 5. Fill the tortillas with the beef and bean mixture, roll them closed, and place them in a single layer in a 9×13 baking dish, seam side down.

Step 6. Cover the tortillas with the enchilada sauce and top with the cheese.
Then top up with cheese:
Step 7. Bake for 20 minutes and then garnish with green onion before serving.
