Chipotle chicken is a versatile dish that provides the fixings for a variety of meals. This easy recipe makes enough to serve a family with plenty of leftovers for tacos, burritos, and rice bowls and even to spice up that salad at lunch. Making this recipe ahead will give you the makings for several meals during the week for the nights when everyone is on the go.
Ingredients
2lb.Boneless skinless chicken breasts
½Red onion chopped fine
3tsp.Minced garlic
2Tbsp.Chili powder
2Tbsp.Adobo sauce
2Tbsp.Olive oil
2tsp.Oregano
2tsp.Cumin
Salt and pepper to taste
Instructions
Add the red onion, minced garlic, chili powder, adobo sauce, olive oil, oregano, cumin and salt and pepper to taste to a food processor. Blend on high until smooth. Add the mixture to a measuring cup, and add enough water to equal one cup. Stir to combine.
Pour the mixture into a Ziploc bag and add the chicken. Shake to coat well. Marinate the chicken for at least 30 minutes.
Preheat the oven to 400 degrees. Bake covered in parchment paper for 30 minutes.
Let rest for 10 minutes before chopping and serving.
