Boneless Chipotle Chicken

Prep Time: 15 minutes – Cook Time: 30 minutes – Servings: 6

Ingredients For Boneless Chipotle Chicken:

2 lb. Boneless skinless chicken breasts

½ Red onion chopped fine

3 tsp. Minced garlic

2 Tbsp. Chili powder

2 Tbsp. Adobo sauce

2 Tbsp. Olive oil

2 tsp. Oregano

2 tsp. Cumin

Salt and pepper to taste

How To Make Boneless Chipotle Chicken:

Step 1. Add the red onion, minced garlic, chili powder, adobo sauce, olive oil, oregano, cumin and salt and pepper to taste to a food processor. Blend on high until smooth. Add the mixture to a measuring cup, and add enough water to equal one cup. Stir to combine.

Step 2. Pour the mixture into a Ziploc bag and add the chicken. Shake to coat well. Marinate the chicken for at least 30 minutes.

Step 3. Preheat the oven to 400 degrees. Bake covered in parchment paper for 30 minutes.

Step 4. Let rest for 10 minutes before chopping and serving.
