Ingredients
2cupscooked chicken, shredded
6ozcream cheese, softened
1/4cupsalsa
1/4cupsour cream
1cupcheddar cheese, shredded
1cupbaby spinach leaves
1/4tspcumin
1/4tspgarlic powder
1/4tspchili powder
Salt & pepper, to taste
15corn or flour tortillas
To serve:
Guacamole
Sour cream
Salsa
Hot sauce
Instructions
Preheat oven to 425˚F.
In a medium bowl, add cream cheese, salsa and sour cream and stir until well combined. Add all the remaining ingredients except the tortillas and toss to combine.
Heat a skillet over medium high heat and cook tortillas for 15 seconds on each side. Remove to a plate covered with tinfoil to keep them warm.
In the middle of each tortilla, place a spoonful of filling in a line and roll tightly. Brush each taquito with oil and place onto baking tray.
Bake for 15-20 minutes or until the shells are crispy. Serve taquitos topped with guacamole, salsa and sour cream.
