There are a few recipes that you need to have handy, and pickle-brined fried chicken is one of those. This wonderful variation of a fried chicken recipe can be used to make an entrée, a snack, or an addition to a friend’s party.
Ingredients
6Boneless skinless chicken thighs
2C.Dill pickle juice
1C.Buttermilk
1C.All purpose flour
1tsp.Salt
¾tsp.Pepper
Oil for frying
Instructions
Place the chicken in an airtight container and cover with the dill pickle sauce. Let marinate overnight in the fridge.
Preheat the oven to 350 degrees.
Add the buttermilk to one bowl and the flour, salt and pepper to another.
Dip the chicken in the buttermilk and then dredge in the seasoned flour.
Heat the oil in a deep sided skillet over medium high heat until the oil reaches 350 degrees.
