Baked Ziti with Shrimp is one of the most comforting dishes that I know of. It is one of the dishes that I enjoy the most because it is easy to make, has great flavors and the shrimp comes out perfectly tender. This dish is the one you want to end a hectic day with. It is so relaxing when you enjoy a dish that is this good!
Ingredients
8oz.Ziti noodles cooked to your liking
½C.Hot water
8oz.Cream cheese softened
12oz.Jar of roasted red peppers drained and chopped
1Tbsp.Olive oil
8oz.Shrimp peeled, deveined and cut into pieces
8oz.Bay scallops
⅛tspSalt
4tsp.Minced garlic
1Tbsp.Chopped fresh parsley
¾C.Shredded mozzarella cheese
Instructions
Preheat the oven to 400 degrees.
In a blender or food processor, pulse together the hot water, cream cheese and roasted red peppers until a smooth sauce has formed.
Heat the olive oil in a large skillet over medium high heat.
Add the shrimp, scallops, garlic and salt to the skillet and saute until cooked through. Drain any excess liquid.
Reduce the heat to medium low and add the sauce to the skillet with the shrimp mixture. Simmer for 5 minutes.
Stir in the ziti noodles and parsley. Toss to combine well.
Pour the mixture into a well greased 9x9 baking dish and sprinkle with the mozzarella cheese.
