The Blueberry Glazed Biscuits are fluffy and light, they taste amazing and they do make a great breakfast. They are easy to make, contrary to what I thought. They will start the day out right and keep everyone happy until lunchtime.
Ingredients
Biscuits:
2cupsall-purpose flour
1tbspbaking powder
1tspsalt
1tbspsugar
½cupbutter, softened and cut into pieces
1 1/4cupbuttermilk, or 1 cup milk + 1 tbsp apple cider vinegar
1cupfrozen blueberries
Glaze:
1cuppowdered sugar
2tbspheavy cream
1/2tspvanilla extract
1lemon, zest and juice
1/4tspground cinnamon
Instructions
Preheat the oven to 400˚F and grease a large oven-proof skillet.
In a large bowl, add small pieces of butter to a large bowl. Add flour, baking powder, salt and sugar. Use hands to combine all of the ingredients together.
Add buttermilk (or milk and apple cider vinegar mixture) to the flour mixture and mix until well combined. Gently fold through frozen blueberries to flour mixture.
On a floured work surface, flatten out the dough. Using a 3” biscuit cutter, cut out biscuits from dough.
Place biscuits inside greased skillet and put into oven. Bake for 30 minutes or until turning golden.
While biscuits cook, make the glaze by combining all ingredients in a small bowl.
Once biscuits are out of the oven, drizzle the glaze over the top of them and serve.
