Ingredients
1lb.Catfish fillets
1C.Yellow cornmeal
¼C.Flour
¼tsp.Cayenne pepper
½tsp.Paprika
2tsp.Seasoned salt
Black pepper to taste
2Large eggs
Oil for frying
Chopped parsley for garnish
Instructions
In a Ziploc bag, combine the cornmeal, flour, cayenne pepper, paprika, seasoned salt, and black pepper to taste. Shake to combine well.
Whisk together the eggs in a large bowl.
Dip the catfish fillets into the egg mixture and then place them in the Ziploc bag. Shake to coat the fillets well.
Heat several inches of oil in a deep-sided skillet over medium-high heat on the stove until the oil reaches 350 degrees.
Fry the catfish evenly on both sides until golden brown and cooked through.
Drain on a paper towel-lined plate and garnish with fresh chopped parsley before serving.
