Golden Fried Catfish

Prep Time: 15 minutes | Cook Time: 6-10 minutes | Servings:4

Ingredients:

1 lb. Catfish fillets

1 C. Yellow cornmeal

¼ C. Flour

¼ tsp. Cayenne pepper

½ tsp. Paprika

2 tsp. Seasoned salt

Black pepper to taste

2 large eggs

Oil for frying

Chopped parsley for garnish

Instructions:

Step 1. In a Ziploc bag, combine the cornmeal, flour, cayenne pepper, paprika, seasoned salt, and black pepper to taste. Shake to combine well.

Step 2. Whisk together the eggs in a large bowl.

Step 3. Dip the catfish fillets into the egg mixture and then place them in the Ziploc bag. Shake to coat the fillets well.

Step 4. Heat several inches of oil in a deep-sided skillet over medium-high heat on the stove until the oil reaches 350 degrees.

Step 5. Fry the catfish evenly on both sides until golden brown and cooked through.

Step 6. Drain on a paper towel-lined plate and garnish with fresh chopped parsley before serving.
