Ingredients
For the cake:
2 ⅔C.Cake flour
3tsp.Baking powder
1C.Softened butter
1Box Strawberry Jello mix
1C.Granulated sugar
4large eggs
2tsp.Vanilla extract
1C.Milk
½C.Pureed strawberries
For the icing:
4oz.Cream cheese
½C.White chocolate chips
3Tbsp.Heavy whipping cream
3-4C.Confectioners sugar
Instructions
Preheat the oven to 350 degrees.
In a mixing bowl, beat together the 1 cup granulated sugar, Jello mix, and 1 cup of softened butter until well blended.
Add in the remaining ingredients for the cake and beat until smooth.
Divide the batter evenly between two well-greased 9” cake pans.
Bake for 30-35 minutes until cooked through.
Place onto a baking rack to cool to room temperature, and then turn them out of the cake pans.
Put one layer of cake on a serving tray or stand.
In a saucepan over medium heat on the stove, combine the white chocolate chips, cream cheese, and 3 Tbsp heavy whipping cream. Continuously stir until the cream cheese and chips have completely melted.
Remove the mixture from the heat and place it into a mixing bowl.
Add the powdered sugar 1 cup at a time until you get the desired icing consistency.
Place a layer of icing on top of the first layer of cake.
