Mexican Lasagna Chip Dip

This Mexican Chip Dip always makes an appearance come game day in our house. I made this for the big Bears Vs. Packers game yesterday serving it with Mexican beer and tortilla chips. It is my absolute favorite chip dip ever! I just can’t help but tell you how absolutely easy this dip is to make. Saute the beef and onion together, mix in the rest of the ingredients, throw in a baking dish, and bake until bubbly-seriously, easy! :) If you plan on hosting a Superbowl party this year, make sure this Mexican dip makes an appearance!

Mexican Lasagna Chip Dip

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 (16 ounce) jar salsa
  • 1 (16 ounce) can refried beans
  • 1 (16 ounce) can chili with beans
  • 2 (4 ounce) cans chopped green chile peppers
  • 1 (2 ounce) can sliced black olives, drained
  • 1 (2 ounce) can jalapenos, drained
  • 2 (8 ounce) packages cream cheese, sliced thin
  • 2 cups shredded cheddar cheese


  1. Preheat oven to 350 degrees F.
  2. In a large skillet over medium-high heat, cook ground beef and onions until onions are soft and ground beef is evenly brown. Remove from heat.
  3. Drain beef and place in a large mixing bowl. Mix in salsa, refried beans, chili with beans, green chile peppers, jalapenos, and black olives until combined. Transfer half of the mixture to a 9×13 inch baking dish. Layer with cream cheese slices. Top with remaining beef mixture and top with cheddar cheese.
  4. Bake in the preheated oven 40 to 45 minutes, or until cheese is melted and bubbling. Serve warm with tortilla chips.

    Mmm…sounds good! I love me a good cheesy dip! That’s interesting that you sliced the cream cheese. That would definitely help melt it faster and create yummy cheesy layers, too! :-p

    Sounds like such a great dip. I already love chips as it is. Adding dip will only increase the addictive factor :)

    This dip is AMAZING! I made it one night for my husband and his friends, and nobody could stop eating it. I was going to double the recipe because I was worried it wouldn’t be big enough….It is. It’s huge and plenty of food. I will definitely be making this for every gathering!
