Are Crescent rolls the same as puff pastry?

No there is a difference, Crescent Roll dough contains yeast, which puff pastry does not.  Another difference is that the Crescent rolls are slightly sweeter than Puff pastry is.

Are there variations that I could make?

You could certainly substitute Chicken or Turkey in place of Ground beef. You could use a cheese such as Pepper Jack, Mexican Blend, or simple White American or Queso Blanco.

What do I serve with the taco bake?

This taco bake can be served on its own or with a side of rice, beans, or a salad. You can also offer toppings such as chopped avocado, sliced jalapeños, or additional shredded cheese for your guests to customize their own portions.
