Bulgar Breakfast Cereal

If you’re looking for a healthy protein packed breakfast, look no further, this Bulgar Breakfast Cereal will keep you full and satisfied for hours. Packed with whole grain bulgar, tart cranberries, plump raisins and crunchy almonds. It also has double the fiber of oatmeal, so skip the oatmeal and give bulgar a try! I love making this cereal the night before so I have a satisfying and healthy meal waiting for me even on my busiest mornings. Just warm in the microwave with a splash of milk and breakfast is ready to go! If one of your New Year’s resolutions is to eat healthy, add this recipe to your breakfast menu. Bulgar Breakfast Cereal

Yield: 4 servings

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients:

4 cups water
1 cup medium-grind bulgur
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 cup raisins
1/4 cup dried cranberries
1/4 cup flaxseed meal
1/2 cup toasted almonds, chopped
1 tablespoon and 1 teaspoon light brown sugar
Honey, for serving

Directions:

In a medium saucepan over medium heat combine water, bulgar, salt, cinnamon, raisins, and cranberries; bring to a boil. Reduce heat, and simmer 20 to 25 minutes or until desired consistency, stirring occasionally.
Remove from heat and divide between 4 bowls. Top each serving with 1 tablespoon flaxseed meal, 1 teaspoon brown sugar and 1 tablespoon chopped almonds. Drizzle with honey to taste. Serve warm.

    Yum, I love the nutty and wheaty (is that a word?) taste from bulgar, but I’ve never made a complete meal out of it. Thanks for sharing!
