We were teased here the past few days in Central Illinois. The sun was shining, the birds were chirping and temperatures soared into the mid 70’s. It sure felt like spring! That was until yesterday. Since then it has been grey, wet, and blustery outside. Not my idea of a spring day! Although it isn’t sunny and warm outside, these Lemonies are certain to cheer up any gloomy day! I can’t even begin to tell you how long I have had these bookmarked to make. Pinterest is amazing isn’t it? Endless pictures of delicious recipes just waiting to me made. I’m addicted! If we don’t follow each other, we definitely should! 😀

Despite the absence of chocolate, these babies are referred to as “brownies” because they have the same moist and fudgy texture as our beloved brownies. Zingy, tart and perfect for spring!

Lemonies {Lemon Brownies}

Yield: 16 brownies


For the Lemon Brownies:
3/4 cup all purpose flour
1/4 teaspoon table salt
8 tablespoons unsalted butter, softened
3/4 cup granulated sugar
1 teaspoon finely grated zest from 1/2 lemon
2 large eggs
1 tablespoon fresh lemon juice from 1/2 lemon

For the Lemon Glaze:
1/2 cup powdered sugar
1 tablespoon fresh lemon juice from 1/2 lemon
1 teaspoon finely grated zest from 1/2 lemon


Adjust oven rack to middle position and heat oven to 350 degrees. Spray an 8” x 8” pan with nonstick cooking spray.
Whisk flour and salt together in medium bowl; set aside.
In stand mixer fitted with paddle attachment, beat butter, sugar, and lemon zest at medium speed until light and fluffy, about 3 minutes, scraping down sides and bottom of bowl with rubber spatula. Add eggs 1 at a time, beating well after each addition, about 20 seconds. Add lemon juice and mix to combine. Reduce speed to low and flour mixture, mixing until incorporated.
Spoon batter into prepared pan and smooth top.
Bake until skewer inserted into brownies comes out clean, 22 to 25 minutes. Cool in pan on wire rack to room temperature.
To make the lemon glaze, in a small bowl, whisk together the confectioners’ sugar, lemon juice and lemon zest. Spread over brownies and let harden, about 10 minutes, before serving.

    I made these gems last night for a family gathering. My granddaughter, 5, has discovered lemon so they were made with her in mind. She loved them and they have now been renamed “Ryleigh’s Squares”. They were a big hit and Ryleigh and I are going to make them together some day soon and add them to her Recipe Book. We take pictures of ourselves making recipes and include them with her recipes in a wonderful binder she can keep forever.

    In South Africa we call cocoa-less brownies BLONDIES….and i have been looking for a recipe for ages. Not that fond of chocolate. Can’t wait to give these a try!! They look delicious.

    I just these lemonies! Has anyone doubled the recipe & baked in a 9×13″ pan? One 8×8 pan just isn’t enough.
